About Finca Muxbal
In the southern region of Mexico, Chiapas boasts a distinctive terroir for coffee cultivation, shaped by its unique combination of altitude, soil and climate. Nestled within this ideal environment is Finca Muxbal, a coffee farm with a rich history, taking its name from the local Mayan dialect, Mam, which means “a place surrounded by clouds”.
Dating back to the 1700s, Finca Muxbal took a turn towards quality in the 1950s when producer Enrique Rodriguez acquired it. Decades of meticulous work followed, restoring the mill and rehabilitating the land. Today, owned by his daughter Mrs. Maeggi Rodriguez, Finca Muxbal is managed by her sons Jorge and Juan Pablo Gallardo, the 6th generation of coffee producers.
Spanning 236 hectares, it features protected springs, rivers and a lush rainforest. Within this wildlife reserve, half of the estate is devoted to coffee cultivation. The rich volcanic soil, good environmental practices and shade-grown coffee trees create a microclimate that provides optimal growing conditions.
Honey Process
The coffee at Finca Muxbal undergoes a meticulous honey processing method. After being harvested, the coffee cherries are left to ferment for slightly over a day before being de-pulped. The beans are then dried without washing, retaining the sticky mucilage, which imparts a unique sweetness and flavor to the coffee.
The drying process takes place on sun-drying patios and raised beds, followed by a final stage in a mechanical setup that ensures the temperatures stay below 40°C. This careful processing helps preserve the coffee’s delicate flavor profile and ensures high-quality beans are produced.
