How We Set Up a New Anfim SP2 Grinder for a Cafe
At Artisti Coffee Roasters in Toormina, we believe that delivering an exceptional coffee experience to our wholesale customers starts long before the machine arrives at their cafe. That's why we take the time to meticulously prepare every new grinder, ensuring it's ready to perform from day one.
Recently, we received a fresh batch of Anfim SP2 grinders and we wanted to give you a behind-the-scenes look at the process we follow before these grinders are sent out.
The Grinder Setup Process
1. Initial Inspection & Run Test: Before we do anything else, we unbox the grinder and check it thoroughly for any marks, dents, or imperfections. We then plug it in and turn it on to make sure the motor and all components are running smoothly. The integrated fan on the Anfim SP2 is a great feature that keeps the motor cool during high-volume use.
2. Seasoning the Burrs (The Crucial Step!): This is the most critical part of our setup process. New grinders, straight from the factory, can have a slight metallic taste and require a “break-in” period for the burrs to bed in. To remove this taste and properly season the burrs, we run approximately 8 kilograms of coffee through the grinder.
We start with a slightly coarser grind setting (around 8 on the Anfim SP2) to speed up the process and then fill the hopper. The manual grind button is used to consistently process the coffee until we've gone through the full 8 kilos. This process ensures the burrs are perfectly seasoned and ready for optimal flavor extraction, preventing any initial unpleasant tastes in your customers' cups.
3. Calibrating the Dosing: Once the burrs are seasoned, we move on to calibrating the grinder’s timed dose settings. The Anfim SP2 comes with two programmable buttons: a single shot and a double shot. We set these by adjusting the grind time.
Based on our extensive experience with these grinders, we know that a grind time of roughly 6.8 seconds will produce a 22.5-gram dose—a perfect starting point for most cafes. We use this as a baseline to program the single- and double-shot buttons. This is a huge benefit for cafes, as they can start serving high-quality, consistent espresso right away without having to spend time dialing in the grinder themselves.
4. Adjusting the Grind Button: By default, the Anfim SP2’s grind buttons are designed to be activated with a portafilter locked in. However, many baristas prefer to grind directly into a dosing pot on a scale for more precise, weight-based dosing. We make a simple software adjustment in the grinder’s menu so that the buttons will still grind even without a portafilter, accommodating this popular workflow.
