Before picking a grinder or a machine, you have to define the business. For me, with a young family, I want a high-volume, weekday-focused "hole-in-the-wall" in a high-foot-traffic CBD area.

Lifestyle: Weekends off, small team, maximum efficiency.
5 Things to Consider Before Buying Equipment
Before you spend a cent, you need to audit your space and your goals:

Space & Utilities: Do you have 32–40 amps of power? Do you have direct water and a waste line? (Trust me, you don't want to be emptying buckets mid-rush).

Volume: We measure this in kilos per week. Are you doing 15kg (600 cups) or 60kg (2,500+ cups)?

Running Costs: It’s not just the purchase price. Think about installation, preventative maintenance, and how often you’ll need to replace grinder burrs.

Staff & Training: Can a junior learn this gear quickly? Automation (like auto-tamps) significantly reduces the "onboarding" time for new baristas.

Jug Rinsers: Non-negotiable for speed.

Scenario 1: The "Startup" (Under 15kg/week)
Budget: ~$15,000 - $20,000 If you are just getting the doors open, you need reliability without blowing the budget.

The Machine: Rocket Boxer (2 or 3 Group). This is a single-boiler workhorse. It has a massive boiler for its class, giving you great steam pressure for a manageable price.

The Grinder: Fiorenzato F64 Evo (Grind-by-Weight). It’s cost-effective and ensures every dose is accurate, which is vital when you're starting out and watching your margins.

The "Must-Have": Cinoart PT2 Auto-Tamp. Even at low volumes, removing the physical strain of tamping and ensuring a level bed every time is a game-changer.
Scenario 2: The "Sweet Spot" (15kg – 30kg/week)
Budget: Under $40,000 Now we are moving into dual-boiler territory for better temperature stability and faster recovery.

The Machine: La Marzocco Linea PB (3 Group). The industry icon. It’s a total workhorse, easy for technicians to service, and incredibly consistent.

The Grinder: Mahlkonig E80S or Fiorenzato F83 (Grind-by-Weight). You need a bigger motor and bigger burrs to get your grind time down to 3–4 seconds.

Expansion: Mahlkonig EK43. I’d add this for retail bag grinding and to offer a rotating "Single Origin" menu for long blacks and filters.
Scenario 3: The "Unlimited" High-Volume Powerhouse (30kg – 60kg+)
Budget: "Infinite" / High Investment When you're doing 3,000+ cups a week, speed is the only metric that matters.

The Machine: La Marzocco Linea PB (Non-ABR). Why not the ABR (Auto Brew Ratio)? Because at 70kg+ a week, I need to be able to hit the brew button before I even set the cup down. The standard PB allows for a faster "flow" in a chaotic rush.

The Grinder: Mahlkonig E80 Grind-by-Sync. This is the pinnacle of speed and heat management.

The Milk System: La Marzocco Wally Milk. This is like having an extra set of hands. It textures milk perfectly while the barista is taking an order or prepping the next shot.

The Ultimate Workflow: At this level, I’d also consider an Ubermilk system for high-volume full-cream milk dispensing, keeping the wands free for alternative milks.
