Fiorenzato F64 & F83 Pro Sense: The New Kings of Weight-Based Grinding?

In the world of commercial coffee, "Weight-Based" is the current buzzword. But beyond the hype, does the technology actually hold up in a busy cafe environment? Today, we’re looking at the Fiorenzato F64 Evo Pro Sense and the F83E Pro Sense—two grinders that take the "Sense" technology from the domestic All Ground and scale it up for professional high-volume use.

The "Pro Sense" Breakdown: What’s in a Name?

Fiorenzato’s naming convention tells you exactly what you’re getting:

  • 64 / 83: The size of the flat burrs (64mm or 83mm).

  • Pro: Refers to the Quick Disconnect System. You can remove the entire hopper and upper burr assembly for cleaning without losing your grind setting.

  • Sense: This identifies the Weight-Based (GbW) technology integrated into the portafilter cradle.

1. Maintenance Reimagined: The Pro System

The biggest headache for baristas is a blocked grinder mid-service. Usually, cleaning the burrs means unscrewing the collar and spending 20 minutes "redialing" the grind from scratch.

With the Pro series, you simply undo two locks and lift the top off. You can clean the burrs, the chute, and the "five-finger" anti-clumping device in seconds. When you snap it back on, you are at the exact same micron-setting as before.

2. Dark-T Burrs: The 4.5 Ton Lifespan

In Australia, these models come standard with Dark-T coated burrs. This carbonized coating is a game-changer for operating costs:

  • F64 (64mm): Rated for up to 3,000kg (compared to ~600kg for standard steel).

  • F83 (83mm): Rated up to a massive 4,500kg.

When you calculate the cost per 100kg of coffee, these grinders are nearly four times cheaper to run than some of their high-end competitors.

3. The "Master Mode" Workflow

The interface on these grinders is highly intuitive, featuring a full-color touchscreen with "Dark" and "Light" modes.

  • Master Mode: The grinder "remembers" the weight of your specific portafilters. You simply place the handle on the cradle, the scale recognizes if it’s your single or double handle, and it automatically doses your target weight (e.g., 21.5g) with +/- 0.1g accuracy.

  • Resume Feature: If you need to "settle" the fluffy grounds mid-grind, you have a 5-second window to remove the handle, tap it, and put it back; the grinder will remember exactly where it left off and finish the dose.

4. Why Weight-Based?

Weight-based grinding removes the biggest variable in a cafe: the "Time vs. Mass" struggle. In a traditional grinder, as you adjust the grind finer, you get less coffee per second. With Sense technology, the grinder doesn't care how fine you go—it stays focused on the grams. This means more consistent extractions and significantly less wastage.

Final Verdict: F64 vs F83?

  • Choose the F64 Evo Pro Sense if you are a smaller volume cafe or a serious home user looking for professional accuracy at a great price point.

  • Choose the F83E Pro Sense for high-volume environments where speed, heat management (via the massive rear-mounted fan), and burr longevity are your top priorities.
