Adrian Lasso is a second generation producer at the family's El Diviso farm in the famed Huila region of Colombia. He has led a program that has resulted in competition and award winning coffees across the world. With his mastery of processing methods and experimentation with exotic varieties, he is currently at the forefront of high end coffee production.
This washed lot has been depulped then fermented in sealed containers for 60 hours (anaerobic). It then gets flushed in hot water and refreshed in cold water- this shock is said to seal the volatile compounds in the bean, capturing their flavours instantly. The journey continues as the coffee is sealed in stainless steel dehumidifiers to reach an optimal moisture level for milling and export. We are again reminded of the many hands and processes coffee experiences before it reaches us to enjoy!
