Your cold drinks menu may be looking a bit tired, even the way you present your drinks can be underwhelming to say the least. We know that as well as the description and flavours, presentation is key to impressing your customers. So we’ve put together a few cold drink options that includes a classic drink done well, a twist on a modern drink and one to wow your café customers.
Implement these into your café and start exciting your customers and increasing sales today.
Classic Iced Mocha
You will need
- Tall glass
- Long spoon
- Straw
Ingredients
- Milk
- Ice Cream
- Chocolate Syrup (Bond St or Kali Chocolate)
- Ice
- Double Shot Espresso
Method
Prepare your double shot of espresso and leave to cool while you prepare the rest of the drink. Place 2 ice cubes in a tall glass. Add 2 scoops of ice cream on top of the ice. Pour the chocolate syrup around the inside of the glass so it can drip down (see chocolate syrup method below). Fill the glass almost to the top with milk, leaving enough room for your double shot of espresso. Place the tall spoon and straw down the side of the glass. Pour your double shot of espresso over the top of the drink to create a cool effect as it run down the glass – be sure not to mix the drink at this point. You are ready to serve this drink to your customer.
How to prepare the Chocolate Syrup
Using a good quality chocolate powder like Bond St or Kali Chocolate, use a 1:2 ratio of chocolate to boiling water to make your syrup. Place 5tbsp of chocolate and 10tbsp (300ml) of boiling water in a milk pitcher and mix till silky and smooth. Pour this into a syrup bottle with a pump lid or sauce bottle for ease of use. This mixture will be good to use for at least 48 hours. It can be left out during service and should be refrigerated when not in use.
Cola Cold Drip
You will need
- Glass
- Saucer
- Straw
- Ice Cube Tray
- Cold Dripper
Ingredients
- Coffee
- Cola
- Mint
Method
Create your cold drink ice cubes - Brew a cold drip using your usual method, for more info watch our video on how to brew cold drip. Place a mint leaf in each ice cube section and pour your cold drip coffee over the top. Place in the freezer over night.
Preparing the cola cold drip – Repeat your cold drip brewing method, but this time replace the water with degassed cola.
Tip – open your cola and place in the fridge overnight so it can degas resulting in a better extraction when brewed.
Preparing the drink – place 3 ice cubes in a glass. Pour the cola cold brew over the ice. Place a mint leaf on top for presentation. Serve on a saucer with a straw.
Berry Infused Nitro Float
You will need
- Glass
- Saucer
- Spoon
- Straw
- Nitro system
- Cold brewer
- Tea brewer
Ingredients
- Berry Tea
- Ice cream
Method
Brew your berry tea using your choice of brewing method, refrigerate to cool. Brew your cold brew coffee as per the instruction and recipe for your nitro system. Watch our video on cold brewers here.
Add your cooled tea and cold brew to your nitro system to infuse. Prepare as per instruction of your nitro system. Place one scoop of ice cream in a glass and pour your berry infused nitro coffee over the top of the ice cream. Place on a saucer and serve with a spoon and straw.
