Coffee production in Timor Leste has ebbed and flowed at the mercy of civil unrest and conflict with its neighbours. Independence in 2002 marked a turning point and we are now seeing a surge in a commitment to quality and pride in its coffee production.
Railaco mill services over 800 farmers in villages in the mountainous western regions. This coffee comers from the village of Sakoko in the Ermera region.
It is fermented anaerobically in cherry for up to 72 hours then dried in temperature controlled greenhouses for 15 days to reach 10-12% moisture ready for milling, hand sorting, colour sorting and numerous other quality checks. The result of this effort is a wonderfully clean and balanced cup with ripe fruit and a persistent finish.
